I’ve always been a bit of a foodie, which is a polite way of saying I am quite picky about what my tastebuds entertain. Growing up, my mother’s pancakes always delighted my palate.
Mama made hers from scratch. I was amazed when I discovered that pancake mix was in stores. Her batter produced slightly fluffy pancakes, which she always fried crisp on the edges. That combination was heavenly.
